BH's Favorite Spinach, Egg, and Bacon Pizza

This is my new favorite pizza. I love salty bacon mixed with spinach, Parmesan, and a runny egg yolk. It really makes all other pizza it's bitch. Forget everything you thought you knew about good homemade pizza and make this recipe.

BH's Favorite Spinach, Egg, and Bacon Pizza

Premade pizza dough for 1 crust
2 cups tomato sauce
2 cups thawed frozen chopped spinach
2 cups grated Parmesan and/or Pecorino Romano
6 slices bacon, cooked until crispy and roughly chopped
2 eggs


Preheat oven to 400 degrees F. Spread the dough out with a rolling pin or just by using your hands onto  a pizza pan. Top with the sauce, spinach, cheese, and bacon and bake for approximately 15 minutes until crispy. Crack 2 eggs in the center of the pizza and place in the oven for an additional 6 minutes until egg is just cooked. To serve, cut slice and serve while hot and egg is runny.

I'm sure (maybe?) it tastes good, but BLARF... it looks horrid! It is a step up from Haggis I would imagine, but ech.

True, it's ugly and I should have made more of an effort with the pictures, but it tastes amazing and I'm really over pretty food that has no favor. You shouldn't be so quick to pass judgment.

No judgement! Just impressions. If I tell myself it's bad enough I'll not run out and make it... maybe :) I had the same impression of the first recipe I saw on your blog, but made it for the BF when he came for a visit. It was wonderful!

You keep churning them out though. It may not look terribly healthy, but the sound and imagined smell make me want it all the more!

I travel to Germany quite a bit and they love to crack an egg over things. They even put a slice of hard boiled egg on their lasagna. So even though it looks unappetizing, I know this must taste fantastic.

Egg on pizza is all the rage - Champagne Bakery does it even. Anyone who has tried it quickly realizes there is no point having pizza any other way.

But then, I also don't get what looks unappetizing about it. Bacon, yeasty dough, cheese and runny egg - is that not a timeless combination?
