Bloghungry Fan of the Month

The Bloghungry fan of the month for June is Brent from bmwlaguna.blogspot.com. Brent is a 38 year old blogger from Laguna Beach, CA who has been in a relationship with his partner Mark for over five years. In his spare time he enjoys working out and riding his bicycle. Brent's favorite Bloghungry posted recipe is Dave Liberman's Individual Veggie Lasagnas. The recipe he'd most like to share with Bloghungry readers is Martha Stewart's Upside-Down Pecan Cake. Pecan Upside-Down Cake

Serves 8; prep time: 20 minutes; Total time: 1 hour 10 minutes
If you like, once you have zested the orange for the batter, you 
could cut the fruit into sections to serve alongside the moist and 
crunchy cake.

1 1/2 cups pecan halves (about 5 ounces)   
1/2 cup (1 stick) plus 2 tablespoons unsalted butter, room temperature    
1 cup plus 1 tablespoon sugar    
1 cup all-purpose flour (spooned and leveled)
3 large eggs, room temperature    
1 teaspoon baking powder    
1/4 teaspoon salt    
1 tablespoon grated orange zest

1.  Preheat oven to 350°. Spread pecans in a single layer on a 
baking sheet; toast until crisp, about 7 minutes. Let cool, then 
coarsely chop 1/2cup pecans. Set remaining aside.

2.  Place 2 tablespoons butter in a 9-inch round cake pan; heat 
in the oven until melted, about 3 minutes. Remove from oven; sprinkle 
1 tablespoon sugar over butter. Scatter chopped nuts over sugar; set 
aside.

3.   In a food processor, process reserved pecans and flour until 
nuts are very finely ground. Set aside. With an electric mixer, beat 
remaining 1/2 cup butter and cup sugar until light and fluffy. Beat 
in eggs, one at a time, until combined.

4.  In a small bowl, combine flour mixture, baking powder, and 
salt; fold into egg mixture. Stir in zest. Pour into prepared pan, 
smoothing top.

5.  Bake until a toothpick inserted in center comes out with a 
few moist crumbs, 35 to 40 minutes. Cool 10 minutes in pan; invert 
onto a rack to cool completely, bottom side up so the butter-pecan 
layer is on top

Bloghungry Fan of the Month

The fans have been good to Bloghungry. Legions of readers swarm around him in the grocery store and send countless emails and recipes to him daily. It's time for Bloghungry to give back to you. Beginning this month, Bloghungry will honor a Fan of the Month each month. The chosen fan will be posted at the start of the month with a picture and write up. It's a good way to meet other foodies, gain international fame, or boost your resume. The Bloghungry Fan of the Month for May is Kyle. Kyle is a 25-year-old eligible gay bachelor living in Chicago, IL. When he's not reading Bloghungry, he enjoys playing Dr. Mario, eating Scooter's frozen custard, and listening to sad indie music. He is the newest member of the Bloghungry Chicago Street Team and works hard to spread Bloghungry's food stylings to throughout the windy city.
