Super Easy Pumpkin MuffinsWhat is fall without pumpkins? When selecting pumpkins to eat you should remember that the flesh from smaller sized pumpkins is usually more tender and succulent. Choose pumpkins that are free from blemishes and heavy for their size. Store whole pumpkins at room temperature up to a month or refrigerate up to 3 months. Pureed pumpkin is also available canned. Pumpkin may be prepared in almost any way suitable for winter squash. It's also a good source of vitamin A. In college I stole this recipe from a friend's Weight Watchers program. It sounds crazy but there are no eggs, oil, or butter in these muffins..
1 15oz can pressed pumpkin (any pureed pumpkin is fine as long as it is 100% pumpkin and not flavored pumpkin pie filling)
muffin paper liners
Mix pressed pumpkin with cake mix. Combine well. Bake at 350 for about 20 minutes. Makes about 18 muffins
