Bloghungry is sick in bed today. My throat is on fire and I can't seem to get out of bed. I slept most of the day and made a big pot of soup to help me through the process. This is a pretty basic recipe that I started making when I had the flu in college and it's become my signature sicktime favorite. Try it yourself or make it for the diseased loved one in your life. For added childhood comfort serve with a side of saltine crackers and a glass of ginger ale.
Bloghungry Chicken Soup
6 cups chicken broth (one giant can)
1-2 lbs boneless chicken breasts
3 carrots, diced
3 celery stalks, diced
1 small onion, diced
1 cup egg noodles
2 bay leaves
1 tbsp thyme
salt and pepper
1/2 cup frozen peas
splash of white wine (optional)
a handful of parsley, chopped (optional)
In large pot over medium-high heat add oil, thyme, bay leaves, onion, carrot and celery. Saute until onion is translucent and add wine. Add broth and bring to a boil. Cut chicken into bite-sized cubes and add to broth. Bring soup to a boil and add egg noodles. Cook until noodles are tender (about 7-10 min) and add peas. Season to taste and add parsley (optional).
