I love Butternut Squash, at least when I've used it to make a sauce. I've made Tyler Florence's recipe to make Gnocchi with a Butternut Squash Sage sauce. I tried this recipe but used olive oil instead of butter, and then added the goronzola and some roasted pecans. But, I found the more I ate it, the less I liked it, the squash had a very strong taste, and it did seem ripe. Does the butter make the squash sweeter than the olive oil and make it taste better when roasting the squash?


I like but don't love butternut squash. However when it's sweetness is contrasted by the powerful flavor of Gorgonzola, it is really something to be rekoned with.


Do yourself a favor. Right before you serve it, drizzle some maple syrup on it. So good.
