COOKS' ILLUSTRATED has an even better peanut sauce recipe. They call it "sesame noodles" (but they're stupid, it uses peanut butter--whatever, they east coast people and know nothing about distinctions in Asian food). Also, I poach my chicken and then shred it so that it is more integrated into the noodle dish. Boil chicken breasts 7 minutes, turn off heat and let sit covered for 15-20 until cooked through. Drain, cool and shred. Add to noodle dish.

that rainbow picture actually made me laugh out loud. I could eat noodle dishes every single meal; this one looks like a good one, too!

I love this recipe, but it makes a ton and you may need to double the peanut sauce recipe to really coat all off the noodles and veggies.
