Brown *is* a bit OCD, but his methods are sensible.

I'd recommend using his "coasting" approach to meat temperature. I remove my chicken from direct heat around 170, and let it continue to cook a bit. I've had a bit of a reputation for overcooking chicken for fear of salmonella, etc. and the result has been rather chewy.
