This looks to be a great weekend feast! I wonder if maybe some powdered mustard in the cider would give it a bolder, less sweet, flavor? What variations have you tried. I have to pick up some pork and try this next weekend. Thanks for sharing. And no, I haven't seen 127 hours either, but want to soon. Perhaps before I eat!

Mark- I'm sure powdered mustard would work out great. I love mustard. The cider doesn't really add a lot of sweetness so don't let it scare you off.
