
Popmuse loves meatballs. As his kind and loving husband, I'm always looking for ways to reinvent and elevate meatballs. I just tried this recipe from Broke Ass Gourmet. They're are great with a side of sweet potatoes or butternut squash. They are good by themselves but amazing with a balsamic glaze (see below) or your favorite BBQ sauce.
Turkey-Apple Meatballs with Honey & Sage
Extra virgin olive oil for greasing baking sheet
1 lb ground turkey
1 large or 2 small tart apple(s), peeled and diced finely
1/4 medium onion, diced finely (about 1/4 cup diced)
2 garlic cloves, minced
2 eggs, lightly-beaten
1/3 cup breadcrumbs
1 tbsp honey
1 tsp ground sage
3/4 tsp each salt and freshly-ground black pepper
Preheat oven to 375 degrees F. Lightly oil a baking sheet and set aside.
Combine all remaining ingredients in a bowl and mix well. Using hands, form mixture into meatballs by rounded tablespoonful and arrange on the oiled baking sheet. Bake for 12-14 minutes, or until meatballs are lightly-browned on the outside and cooked through on the inside.
Quick Balsamic Glaze
1/2 cup balsamic vinegar
1/4 cup brown sugar
cracked black pepper
In a small pot or pan combine balsamic vinegar and brown sugar, place over high heat and boil until thickened. Cool slightly and spoon over the greens, sprinkle with the cracked black pepper and serve.
